History
In 1887, the Mitchell family entered into the whiskey importing and bonding business. They sent empty wine, sherry, and port casks to the local Jameson distillery, which were filled and returned to the Mitchell’s cellar warehouse. The Mitchells matured their whiskey in casks under the busy streets of Dublin in a network of underground cellars. Here each cask was marked with a spot or “daub” of paint to identify how long they would be matured for: blue for 7 years, green for 10 years, yellow for 12 years and red for 15 years, and the name was born.
What is Single Pot Still?
Where single malt is produced from 100% malted barley, pure pot still whiskey uses a mix of malted and un-malted barley. It is tripled distilled in traditional copper pot stills delivering full, complex flavors and a wonderful, creamy mouth-feel. This is the quintessential style of Irish whiskey.
Green Spot
Green Spot is the first expression in the Spot Whiskey range. This expression is a non-age statement Single Pot Still Irish Whiskey aged between seven and ten years in a combination of ex-American Whiskey and ex-Sherry casks. This product is non-chill filtered and bottled at 80 proof (40 % ABV
Yellow Spot
The Yellow Spot expression is aged for twelve years in three separate and very different oak casks: ex-American Whiskey, ex-Sherry butts, and ex-Spanish Malaga casks. Malaga is a sweet fortified wine from the city of Málaga on the south coast of Spain. The influence of the Malaga cask brings an exotic sweet note to the whiskey, making it a truly delightful taste experience. Unlike a traditional cask finish, aging the entire period in each separate cask allows the Master Blender to perfectly mingle the three together to achieve his desired flavor profile. This product is non-chill filtered and bottled at 92 proof (46 % ABV).
Red Spot
The Red Spot expression is aged over fifteen years in a combination of ex-American Whiskey barrels, ex-Sherry butts, and ex-Sicilian Marsala wine casks. This product is non-chill filtered and bottled at 92 proof (46 % ABV).
Blue Spot
The Blue Spot expression is aged from a minimum of seven years but includes some much older whiskey, in a combination of ex-Bourbon barrels, ex-Sherry butts, and ex-Portuguese Madeira casks. This product is non-chill filtered and bottled at cask strength.
